Mother's Crack Cake
Yields: 12-16 servings
Prep time: 20 minutes
Bake time: 30-35 minutes
Ingredients:
For the Cake:
• 1 box (15.25 ounces) yellow cake mix (such as Duncan Hines or Betty Crocker)
• 1 cup whole milk
• 1/2 cup vegetable oil
• 4 large eggs
• 1 teaspoon vanilla extract
For the Glaze:
• 1 cup granulated sugar
• 1/2 cup (1 stick) unsalted butter
• 1/4 cup whole milk
• 1 teaspoon vanilla extract
Instructions:
1. Preheat & Prep: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
2. Mix the Cake Batter: In a large bowl, combine the yellow cake mix, 1 cup whole milk, vegetable oil, eggs, and 1 teaspoon vanilla extract. Beat with an electric mixer on medium speed for 2-3 minutes, or until the batter is smooth and well combined.
3. Bake the Cake: Pour the batter evenly into the prepared baking pan. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
4. Prepare the Glaze: While the cake is baking, prepare the glaze. In a small saucepan, combine the granulated sugar, butter, and 1/4 cup whole milk. Bring the mixture to a boil over medium heat, stirring constantly until the sugar is dissolved and the butter is melted. Remove from heat and stir in 1 teaspoon vanilla extract.
5. Glaze the Warm Cake: As soon as the cake comes out of the oven, use the wooden skewer or a fork to poke holes all over the top of the warm cake. Immediately and slowly pour the hot glaze evenly over the entire cake, allowing it to soak into the holes.
6. Cool & Serve: Let the cake cool completely in the pan on a wire rack before slicing and serving. The glaze will set as it cools, forming a delicious, caramelized top.

Ritz Carlton Lemon Pound Cake
- Kitchen-Aid Mixer
- Tube Cake Pan
- 15-cup Bundt Cake Pan
- 3 cups all-purpose flour
- 1 Tbsp baking powder
- ¾ tsp salt
- 3 cups sugar
- 1 cup unsalted butter, room temperature
- ½ cup Crisco shortening
- 5 large eggs
- 1 cup whole milk
- 6 Tbsp lemon juice
- 1 lemon, zested
- Preheat oven to 350ºF. Spray or butter and flour a 15-cup Bundt pan.
- Sift flour, baking powder and salt into medium bowl. Set aside.
- Using an electric mixer, cream together butter, shortening and sugar. Add eggs one at a time, beating until well blended after each one.
- Add dry ingredients in three additions to butter mixture alternately with milk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Mix in lemon juice and zest.
- Pour batter into prepared pans. Bake cakes until tester inserted into center comes out clean, about 55 minutes. Cool cakes in pans for 15 minutes. Turn cakes out onto racks and cool completely.
- DO NOT fill your pans to the very top or the cake will overflow!
- I use a 15-cup Bundt pan. It also works in a Tube Pan.
- If you are using a 12-cup or 10-cup Bundt pan, make sure to leave at least 1-inch to 1½ inches unfilled. You may have leftover batter.
- One cup of flour weighs 4.25 ounces. To properly measure flour, give the flour a stir to loosen it up in the container. Use a spoon and lightly spoon the flour into your measuring cup. Use a flat straight edge (like the straight back of a knife) to level off the top of the flour in the measuring cup. Do NOT compact the flour in the measuring cup.

Chocolate Marble Banana Bundt Cake
- two 4-ounce quality semi-sweet chocolate bars (113g each), finely chopped
- 1 cup (8 ounces; 240ml) heavy cream or heavy whipping cream
- 1 and 1/2 cups (345g) mashed bananas (about 4 medium or 3 large ripe bananas)
- 3 cups (375g) all-purpose flour (spooned & leveled)
- 1 and 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed light or dark brown sugar
- 3 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 1 and 1/3 cups (320ml) buttermilk, at room temperature*
- Preliminary Note: This cake is swirled and topped with chocolate ganache. If you aren’t topping the cake with ganache, halve the ganache recipe so you’re only making what you need for the swirl. (Use one 4 ounce chocolate bar and 1/2 cup (120ml) heavy cream.)
- Make the ganache: Place chopped chocolate in a medium heat-proof bowl. Heat the cream in a small saucepan over medium heat until it begins to gently simmer. (Do not let it come to a rapid boil– that’s too hot!) Pour over chocolate, then let it sit for 2-3 minutes to gently soften the chocolate. Very slowly stir until completely combined and chocolate has melted. The finer you chopped the chocolate, the quicker it will melt with the cream. You should have about 1 and 1/2 cups of ganache. Set half aside (3/4 cup or 180ml) at room temperature uncovered until it has thickened into a gravy-like consistency, about 30 minutes. Use this in step 7. Cover and refrigerate the rest of the ganache to use as the topping in step 10. Ganache topping can be refrigerated for up to 5 days before using.
- Preheat the oven to 350°F (177°C) and generously grease a 10-inch Bundt pan. To guarantee the Bundt cake releases seamlessly, I strongly recommend using a heavy coating of nonstick spray. Our favorite pans include this one and this one.
- Make the cake: Mash the bananas until there’s hardly any lumps. I usually just use my mixer for this! Set mashed bananas aside.
- Whisk the flour, baking powder, baking soda, cinnamon, and salt together. Set aside.
- Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy, about 1 minute. Add both sugars and beat on high speed for 2 minutes until creamed together. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the eggs and the vanilla. Beat on medium-high speed until combined, then beat in the mashed bananas. Mixture will be chunky and appear curdled—that’s ok. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients in three additions alternating with the buttermilk and mixing each addition just until incorporated. Do not over-mix. The batter will be thick with some lumps. Makes about 6 cups of batter.
- You will use the slightly thickened ganache reserved for the swirl in this step. Pour about 1/3 of the cake batter (about 2 cups) evenly into prepared pan. Drizzle half of the ganache on top (about 6 Tablespoons). Swirl with a knife or toothpick. Evenly pour another 1/3 of the cake batter on top, followed by the rest of the ganache (about 6 Tablespoons), then the rest of the cake batter. Swirl everything together with a knife or toothpick. See photo above for a visual.
- Bake for 60-75 minutes or until a toothpick inserted into the cake comes out clean with just a couple lightly moist crumbs. This is a large, heavy cake so don’t be alarmed if it takes a little longer in your oven. If the cake is browning quickly in the oven, tent it with aluminum foil to help it bake more evenly.
- Once done, remove from the oven and allow to cool for 2 hours inside the pan. Then, invert the slightly cooled cake onto a wire rack or serving dish. Cool completely before topping, slicing, and serving.
- The ganache topping will be very thick by now. Warm it over low heat on the stove stirring constantly until thinned and drizzle-able consistency. Do not over-heat it. Or warm in 10 second increments in the microwave, stirring after each until thinned. Drizzle over cake, then slice and serve.
- Cover leftover cake tightly and store at room temperature for up to 2 days or in the refrigerator for up to 5 days. Cake tastes unbelievable warmed in the microwave for a few seconds and served with vanilla ice cream.
- Make Ahead Instructions: You can prepare the ganache used for the swirl and topping up to 5 days in advance. Make sure both are warmed/thinned out before using. The ganache used for the swirl should be a gravy-like consistency and the topping can be pretty thin. To warm/thin out, see step 10 above or step 5 in the chocolate ganache post. Cake with or without topping freezes well up to 3 months. Thaw overnight in the refrigerator, then bring to room temperature before serving.
- Chocolate: You can use high quality chocolate chips if needed (I prefer Ghirardelli semi-sweet chocolate chips), but I recommend using real chocolate baking bars. You can find them right next to the chocolate chips in the baking aisle. They are sold in 4 ounce bars. I like Bakers or Ghirardelli brands. You can use other varieties of chocolate too, such as milk chocolate (aka German Chocolate) or Dark Chocolate. Do not use white chocolate.
- Buttermilk: Buttermilk is required for this recipe. You can make your own DIY buttermilk substitute if needed. Add 1 Tablespoon of white vinegar or lemon juice to a liquid measuring cup. Then add enough room temperature whole milk to the same measuring cup until it reaches 1 and 1/3 cups. (In a pinch, lower fat or nondairy milks work for this soured milk, but the cake won’t taste as moist or rich.) Stir it around and let sit for 5 minutes. The homemade “buttermilk” will be somewhat curdled and ready to use in the recipe.

- Bake for about 10 minutes, or until golden brown around the edges.
- Use the cap of a bottle (I use the cap of my vanilla extract bottle) to press into each cookie to form a "cup."
- Let cool for 5 minutes in the pan and then remove to a wire cooling rack.
- In the bowl of a stand mixer, stir the butter until smooth.
- Add the powdered sugar and vanilla and stir to incorporate.
- Add the milk (or cream) and beat until smooth, adding an addition 1/2 - 1 tablespoon of milk, if needed for desired consistency. Stir in food coloring, if desired.

Easy Strawberry Bread
- 2 cups (250g) all-purpose flour (spooned & leveled)
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg, at room temperature
- 3/4 cup (150g) granulated sugar
- 1/4 cup (50g) packed brown sugar
- 3/4 cup (180ml) buttermilk, at room temperature*
- 1/3 cup (80ml) vegetable oil or melted coconut oil
- 2 teaspoons pure vanilla extract or vanilla bean paste
- 1 and 1/2 cups (230g) chopped fresh strawberries, tossed in 1 Tablespoon of flour
- 1/2 cup (60g) confectioners’ sugar, sifted
- 1 Tablespoon (15ml) heavy cream or milk
- 1/4 teaspoon pure vanilla extract or vanilla bean paste
- Cook Mode Prevent your screen from going dark
- Preheat oven to 350°F (177°C). Grease an 8×4-inch loaf pan like this one or this one with nonstick spray. Set aside.
- Make the bread: In a large bowl, whisk the flour, baking powder, baking soda, and salt together until combined. Set aside.
- In a medium bowl, whisk the egg, granulated sugar, brown sugar, and buttermilk together until combined. Make sure there are no brown sugar lumps remaining. Whisk in the oil and vanilla.
- Slowly pour the wet ingredients into the dry ingredients and gently whisk until there are no more lumps. Avoid over-mixing. Gently fold in the strawberries. Pour/spoon batter into prepared loaf pan.
- Bake for 55–70 minutes, making sure to loosely cover the bread with aluminum foil halfway through to prevent the top from getting too brown. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs. All ovens vary, so begin checking every 5 minutes around the 55-minute mark.
- Remove bread from the oven and allow the bread to cool in the pan set on a wire rack for 1 hour. Remove bread from the pan and place the loaf directly on the wire rack to cool completely.
- Make the icing: Whisk the icing ingredients together. (I usually use heavy cream, which promises a thick icing.) Drizzle over bread before slicing.
- Cover and store bread at room temperature for 2 days or in the refrigerator for up to 1 week. Icing seeps into the top of the strawberry bread over time, so expect the tops of the slices to become a little moist.
Unbelievably Moist Banana Bread
- 2 cups sugar
- 1 cup soft margarine or butter, (two 1/2 cup sticks of butter)
- 5 eggs
- 2 cups flour
- 6 tbsp buttermilk, (reg milk will work too)
- 2 tsps baking soda
- 1-1/2 cups ripe bananas, about 4-5 small
- 1 cup nuts, chopped (optional)
- Mix all ingredients together. Let mixture sit for 1 hour in the mixing bowl in room temperature. (Note: Due to banana size, the mixture may not all fit into one loaf pan; do not overflow your pan. Use two loaf pans for the extra batter. Fill your pan to around 2/3 full.)
- Pour into greased loaf pans. I used a 9x5 and a 4x8 for the extra. Bake 60-65 minutes at 350 degrees. Check doneness at 45 minutes with a toothpick.
If using a bundt pan, bake for 50-60 minutes at 300 degrees. Ten minutes before final cooking time, check doneness with toothpick. When toothpick comes out clean from middle of the loaf, it is done or when center of loaf is close to 195-200 degrees F.
(Note: It’s okay to let the crust get very dark if cooked for longer, it is supposed to be and won’t hinder the taste). - Let stand until almost cool. Loosen bread from sides with sharp knife and set aside. Enjoy!

Strawberry Honey Butter
This Strawberry Honey Butter is an amazing condiment, perfect for toast, pancakes, muffins, or any baked good. And only takes minutes to whip up!
Prep Time: 10minutes minsTotal Time: 10minutes mins
Servings: 16 (about 1 1/2 cups total)
Ingredients
- 1 cup unsalted butter ,room temperature
- pinch of kosher salt
- 8 small strawberries ,stems removed, chopped
- 1/4 cup honey
Instructions
- In a medium bowl, crush strawberries using a potato masher (you should end up with 1/2 cup); set aside.
- Place butter and salt in the bowl of a food processor; pulse a few times until butter is fluffy. Scrape down the sides, if necessary.
- Add in the mashed strawberries; pulse several more times until incorporated.
- Add in the honey and pulse until incorporated, and light and fluffy.
- Leave on the counter for a couple days or transfer to an airtight container and refrigerate until needed (bring to room temperature before serving.)
Notes
Salted vs. unsalted butter. I almost always bake and cook with unsalted butter because it ensures that I can control the amount of salt in the food, and the flavor. Also, different companies add varying amounts of salt to their butter - removing the salt from the butter takes all the guess work out of the equation. BUT, this strawberry honey butter would be delicious with either unsalted or salted. If you use salted butter, omit the pinch of extra salt listed in the written recipe. Or taste after everything is blended and adjust to your liking.
Don't have a food processor? If you don’t have a food processor, you can easily use a bowl and hand held mixer following the same steps listed.
Halve the recipe. A little of this flavored butter goes a long way - if you don’t think you’ll go through it fairly fast, simply cut the recipe in half. You can always make it again, since it’s so easy!
Storage. This can be stored on the counter if it will be eaten within a couple days, or in the refrigerator in an airtight container, up to a week, then allow to come to room temperature before serving. You can also freeze it up to 2 months (it's safe after that, but quality significantly diminishes.) Thaw overnight in the refrigerator, then set out to reach room temperature.
