The goodness of oats combined with juicy blueberries and protein packed almonds all lightly sweetened and baked into a delicious family favorite breakfast!
- 3 1/4 cup old fashioned oats (NOT QUICK)
- 12 packets of SPLENDA® Stevia Sweetener
- 2 teaspoon cinnamon
- 1/2 cup almonds coarsely chopped
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 3/4 cup almond milk
- 1/3 cup butter melted
- 1/2 teaspoon almond extract
- 1 1/2 cups blueberries divided
TOPPING
- 3 packets SPLENDA® Stevia Sweetener
- 1 tablespoon flour
- 1 1/2 tablespoons butter
- 3 tablespoons almonds coarsely chopped
- 2 tablespoon oats
INSTRUCTIONS
- Preheat oven to 350°F.
- In a large bowl combine oats, SPLENDA® Stevia Sweetener, cinnamon, almonds, baking powder and salt.
- Add in eggs, almond milk, butter and almond extract. Mix well.
- Fold in 3/4 cup blueberries and spread in a greased 9×9 pan.
- Top with remaining 1/2 cup blueberries.
- Combine topping ingredients in a small bowl and mix until you have large crumbs. Sprinkle over blueberries.
- Bake 35 – 40 minutes
