Ingredients
- 4 tbsp flour
- 2 tbsp granulated sugar
- 1/8 tsp baking powder (a 1/2 of a 1/4 tsp)
- 1/16 tsp baking soda (a 1/4 of a 1/4 tsp)
- 3 tbsp milk
- 1 tbsp vegetable oil
- 10 fresh blueberries
- streusel topping:
- 1 tbsp (1/2 oz/ 15g ) cold butter
- 11/2 tbsp flour
- 11/2 tbsp brown sugar (or white)
- 1/4 tsp vanilla extract (optional)
- Mix everything listed in muffin ingredients except blueberries into a microwave safe mug with a small whisk. Drop blueberries in, spreading them out.
- In a small bowl, mix streusel ingredients with a fork until butter pieces resemble bread crumbs.
- Sprinkle streusel on top of muffin batter, spreading out evenly across surface.
- Microwave for 1 minute or until firm in the center of the cake (timing is based on my 1200W microwave so your timing might vary)
- Enjoy immediately!
