Slow Cooker Glazed Carrots

INGREDIENTS

  • 2 lb. carrots, peeled and cut into 1"-thick slices
  • 1/4 c. unsalted butter
  • 1/3 c. light brown sugar
  • 1 tsp. chopped fresh thyme leaves
  • 1 tbsp. chopped parsley
  • kosher salt

DIRECTIONS

  1. Melt butter in a medium skillet over medium heat until it begins to brown. It will smell nutty and begin to foam. Scrape the browned bits off of the bottom of the pan with a wooden spoon and immediately pour into the slow cooker.
  2. Add carrots, salt, brown sugar and thyme. Season with salt and toss to combine.
  3. Cook on high for 3 hours, or until tender.

Salted Caramel Crunch Cookies


INGREDIENTS

2 cups all-purpose flour*
3/4 cup Dixie Crystals Light Brown Sugar
1/2 cup Dixie Crystals Extra Fine Granulated Sugar
1 teaspoon baking soda
1 tablespoon cornstarch
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup unsalted butter, melted and slightly cooled
2 large eggs
2 teaspoons vanilla extract
1 cup toffee bits
1 cup caramel squares, cut into fourths
1 cup chopped pecans
Flaked sea salt, optional

*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

DIRECTIONS

  1. Preheat oven to 350°F. Line two large baking sheets with parchment paper. Set aside.
  2. In a large bowl, whisk together flour, brown sugar, granulated sugar, baking soda, cornstarch, salt and cinnamon.
  3. Add butter, combine with a spatula or with a handheld mixer until crumbly. Add eggs and vanilla extract and beat till well combined. Fold in toffee chips, caramel squares and pecans. (Optional: reserve a few toffee chips, caramel squares and pecans to top cookie dough with for a prettier presentation.)
  4. Roll 2 heaping tablespoons of cookie dough into a ball and place on prepared baking sheet leaving 2 inches per cookie for spreading. (If you reserved extra toppings, place them on top of cookie dough now.)
  5. Bake for 12 minutes, or until the edges of cookies are set. Remove from oven and sprinkle with flaked sea salt, to taste.
  6. Let cookies cool for 10 minutes on baking sheet. Enjoy warm or allow to cool completely and store in an airtight container for up to 5 days.

Strawberry and Pineapple Pretzel Salad

Ingredients

  • 1 (8 oz) can crushed pineapple
  • 2 cups boiling water
  • 2 (10 oz) packages frozen strawberries
  • 2 (3 oz) packages strawberry gelatin dessert mix
  • 1 (8 oz) container frozen whipped topping, thawed
  • 3/4 cup sugar, plus 3 tablespoons
  • 1 (8 oz) package cream cheese
  • 3/4 cup butter, melted
  • 2 cups pretzels, crushed

Preparation

Preheat oven to 400°.

For the crust, mix the pretzels, butter, and 3 tablespoons of sugar. Press this mixture into a 9x13-inch pan and bake for 7 minutes. Set aside and allow to cool.

In a mixing bowl, beat together the cream cheese and 3/4 cup of sugar. Fold in the whipped topping, and spread over the cooled crust. Refrigerate until well chilled.

In a small bowl, dissolve the gelatin in the boiling water, and allow to cool slightly. Add the strawberries and pineapple, and pour over the cream cheese mixture. Refrigerate until serving time.

To serve, cut slices and serve with a dollop of whipped topping.

INGREDIENTS
  • 8 ounces cream cheese, softened
  • 1 (1-ounce) package Ranch dressing mix
  • 1 (3-ounce) container prepared bacon bits
  • 2 cups cheddar cheese, shredded (plus extra for garnish)
  • 16 ounces sour cream
  • Thinly sliced green onion, for garnish
INSTRUCTIONS
  1. Preheat oven to 400 degrees.
  2. In mixing bowl, combine all ingredients; mix well.
  3. Transfer to a 2-quart baking dish and cover with aluminum foil.
  4. Bake for 25 to 30 minutes or until hot and bubbly.
  5. Removed from the oven, uncover, and top with more shredded cheddar cheese and green onion for garnish. Serve warm.
NOTES
Instead of prepared bacon bits, you can also use 6 to 7 strips of bacon cooked crispy and crumbled.

  • ½ cup slivered almonds
INSTRUCTIONS
  1. Add green onions, cheddar cheese, mayonnaise, bacon bits, and slivered almonds to a small bowl. Mix until combined and chill for at least 2 hours. Serve with your favorite crackers.

Mississippi Sin Dip

INGREDIENTS

  • 1 c. sour cream
  • 1/2 c. mayonnaise
  • 8 oz. cream cheese, softened
  • 2 1/2 c. shredded cheddar, divided
  • 1 c. chopped ham
  • 2 tsp. garlic powder
  • 10 dashes Frank's Red Hot
  • 5 dashes Worcestershire sauce
  • kosher salt
  • Freshly ground black pepper
  • 1 loaf French bread
  • Sliced green onions, for garnish
  • Crackers, for serving

DIRECTIONS

  1. Preheat oven to 350º.
  2. In a medium bowl, combine sour cream, mayonnaise, cream cheese, 2 cups cheddar, ham, garlic powder, hot sauce, and Worcestershire until fully mixed, then season with salt and pepper.
  3. Hollow out the inside of the bread with a serrated knife and slice hollowed bread into cubes. Scoop dip into loaf and sprinkle with remaining 1/2 cup cheddar. Wrap loaf in aluminum foil and bake until dip is warmed through and bread crusty, 28 to 30 minutes. Garnish with green onions and serve with bread pieces and crackers.

Cheese Ball Bites

INGREDIENTS

  • 12 oz. cream cheese, softened
  • 1 c. shredded Cheddar
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • kosher salt
  • Freshly ground black pepper
  • 8 slices bacon, cooked and finely chopped
  • 1/3 c. finely chopped fresh chives
  • 1/3 c. finely chopped pecans
  • 18 pretzels sticks

DIRECTIONS

  1. Mix together cream cheese, cheddar, garlic powder, and paprika and season with salt and pepper. Form into 18 small balls and refrigerate until firm, 1 hour.
  2. In a shallow bowl or on a plate, stir together cooked bacon, chives, and pecans.
  3. Roll balls in bacon-chive-pecan mixture and insert a pretzel stick in each ball.
  4. Serve. (If not serving right away, loosely cover with plastic wrap and return to fridge. Let sit at room temperature 15 minutes before serving.)
