Rotel Crock Pot Chicken

Rotel Crock Pot Chicken perfect meal for a busy night!

Ingredients: 
4 Chicken Breasts, frozen
1 can Rotel tomatoes
1 brick Cream Cheese
1 can Cannellini Beans, rinsed
1 can Fiesta Corn, with juice

Directions: 
1. Place chicken breasts in crock pot and pour 1 can of Rotel tomatoes over the chicken, turn crock pot on high, and cover. This can cook for up to 6 hours. (if your chicken breasts are thawed you will want to use low temperature.)

2. Just a few minutes before you are ready to eat remove and with two forks shred chicken.

3. Place cream cheese in crock pot over chicken, allow a few minutes to soften, then mix in.

4. Rinse beans and add to crock pot, along with can of fiesta corn, stir until it's incorporated. Turn temp down to low, and eat whenever you are ready. Which could be right away or in 2 hours.

Serve over rice with tortilla chips on the side.
