South of the Border Tenderloin

2 one pound pork tenderloins (or turkey) 1 teaspoon salt
l/2 teaspoon white pepper
2 tablespoons garlic powder
2 tablespoons chili powder

Combine salt, pepper, garlic powder and chili powder. Distribute on wax paper large enough to dredge tenderloins. Roll each tenderloin in condiment mixture until out, side is completely covered. Rub the seasonings into the meat. Place on a baking sheet. Preheat and bake at 450 for 10 minutes; reduce heat to 325 and bake another 15-25 minutes, checking for doneness.

Inside meat temperature should be 160 degree for pork.

To avoid dryness, cover tenderloin with aluminum foil the last 15-25 minutes of baking time.

Preparation time: 30-35 minutes.
Serves 4-6
