Mexican Cornbread

Mix all ingredients together except half the cheese. Pour into greased hot skillet or pan. Top with remaining cheese. Bake at 350 degrees for 45 minutes.

INGREDIENTS
1 cup all purpose flour
1 cup (grated) cheddar cheese
1.5 cups yellow cornmeal
2 Jalapeno peppers (chopped)
3 teaspoons baking powder
2 tablespoons (chopped) bell pepper
1 teaspoon salt
1 cup buttermilk
1/2 teaspoon baking soda
Jalapeno juice as desired
1 teaspoon sugar
1 (11 ounce) can Mexicorn
1/2 cup bacon drippings
2 eggs

Serves 8-10
