Candied Yams (Sweet Potato Casserole)

3 c. cooked yams, mashed
1 c. sugar
1/2 c. melted oleo
2 eggs
1 t. vanilla
1/3 c. milk
1/4 teaspoon ground cinnamon (optional)

Mix and pour into casserole. Top with the following mixture:


1/2 c. brown sugar

1/4 c. flour
2 1/2 T oleo
1/2 c. chopped pecans

OR

3 cups miniature marshmallows

Place sweet potatoes in a shallow baking pan lined with foil. Bake at 425° for 1 hour or until tender. Reduce oven temperature to 350°. Bake for 25 minutes at 350°.
